Father and son duo are opening a floating pizzeria on a canal boat in Stockport

A new floating pizzeria is opening which will be based in Stockport – for now.

The Waltzing Matilda is a canal boat moored up on the Macclesfield Canal, founded by father and son duo Paul and Chris Edwards. 

The floating restaurant will move between Stockport and Cheshire, pitching up at different towns each weekend bringing a slice of delicious grub.

On the menu is authentic Neapolitan-style pizzas cooked in an on-board wood-fired pizza oven.

The Waltzing Matilda will also eventually be allowed to welcome up to eight guests at a time in its tiny dining area. 

For now, pizzas will be served for takeaway through a hatch in the side of the boat.

Son Chris told the Manchester Evening News: “It’s very small, it’s not a massive venue, but you’ll be able to sit and watch the kitchen in action.

“We’ve had people calling us wanting to book for 30 and it’s like ‘not a chance!’

“We’d love to have some outside seating on the tow path if it works out well in warmer weather.”

The duo are working to get the boat ready to open for trade in May. Guests can also expect a menu of coffee and cakes offered too! 

Chris, who has worked at the likes of the Hilton and Albert’s Schloss, is developing the menu of pizzas which will range in price from £6 to £10. 

Dough will proove for 48 hours and is made with just four ingredients before being topped with San Marzano tomatoes and fior de latte mozzarella.

The Waltzing Matilda will visit towns such as Whaley Bridge, Mossley Locks, Bollington, Marple and Poynton.

Chris said: “We’ll post on Facebook where we are and hopefully people will plan to see us and make a little outing of it.”

He added: “My dad’s lived on a canal boat for about four years. We were sat having a cup of tea and he mentioned wanting to start a cafe on the canal.

“I’m a chef, so when we saw a barge for sale we started building on the idea and decided to go for it.

“It’s really exciting to be able to do something different, and to build up some relationships with communities. It’s very exciting.”
