A Lancashire bakery will be bringing its nostalgic baked goods and cookie pies to Mancunians with the launch of its debut Manchester pop-up next month.

Finch Bakery started life as a university hobby for twin sisters Lauren and Rachel Finch, who would bake an array of retro sweet treats from their parents’ kitchen after they successfully baked their own twenty-first birthday cake.

In 2016, the Finch sisters secured their debut bakery in Great Harwood and, fast forward six years, have built their brand into a sprinkles-covered phenomenon in its own right.

In its short life, Finch Bakery has gained a shop, a unit, fourteen jobs, a van, an online delivery service, a Sunday Times Best Selling recipe book and a huge cult online following, with their Instagram page alone boasting over 160,000 followers.

Finch Bakery’s trademark bakes include ‘cake jars’, brownies and blondies baked with retro biscuits and chocolates, and their famous ‘cookie pies’; huge slabs of cookie mixture baked with an array of sweet favourites, such as Battenberg cake, Creme Eggs and Biscoff biscuits.

More recently, Finch Bakery even made its very own ‘school dinner cake‘, complete with runny white icing and colourful sprinkles. It doesn’t get any better than school cake, does it?

And now, Finch is set to make the big move to the city with the launch of its debut Manchester venue.

Finch Bakery will be moving into the ground floor of Harvey Nichols at Exchange Square, where they will provide the perfect sweet pitstop for shoppers.

A huge selection of signature treats will be available to takeaway, while a selection of fresh daily bakes will also be on offer to eat-in and enjoy at the Second Floor Deli Bar in store.

Co-founders Lauren and Rachel Finch said on the upcoming opening: “We can finally reveal we are opening a second Finch Bakery site… In our dream location of Manchester City centre!

“And where better than Harvey Nichols? We’re so pleased to be given the opportunity to pop up in such an iconic store and we can’t wait to bring our cakes and brownies to the people of Manchester”.

The Finch Bakery pop-up will be opening on the ground floor of Harvey Nichols on Monday February 7th.
